The GOAT Lobster Cobb Salad Recipe | The GOAT Chef™

Chilled Florida lobster, smoky bacon, creamy avocado, farm-fresh eggs, blue cheese, tomatoes and crunchy greens. This is not just a salad — this is a steakhouse masterpiece.

The Lobster

  • 1 lb fresh Florida lobster tails, raw, cut into large chunks
  • 1 tablespoon unsalted butter
  • 1 teaspoon kosher salt

Sous Vide

  1. Set sous vide to 130°F.
  2. Add lobster, butter and salt to bag.
  3. Cook 40 minutes.
  4. Remove and pat completely dry.

Finish

  1. Lightly torch lobster for a kiss of color.
  2. Chill before building the salad.

The Greens

  • 2 heads romaine lettuce
  • Olive oil
  • Diamond Crystal kosher salt
  • Fresh cracked black pepper
  1. Cut romaine in half lengthwise.
  2. Drizzle with olive oil.
  3. Season with salt and black pepper.
  4. Blow torch the cut sides until lightly charred.
  5. Let cool slightly and serve.

The Fixings

  • 6 slices thick-cut bacon, cooked crisp
  • 2 farm-fresh eggs, hard boiled
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup crumbled Florida blue cheese
  • 2 tablespoons chopped fresh chives

GOAT Cobb Dressing

  • ½ cup Duke’s mayonnaise
  • ¼ cup sour cream
  • 2 tablespoons buttermilk
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • Salt and black pepper, to taste

Whisk until smooth. Chill until ready to use.

Build It GOAT Style

  1. Pile the charred romaine in a large bowl or platter.
  2. Arrange fixings in rows: bacon, egg, avocado, tomatoes and blue cheese.
  3. Top with chilled Florida lobster chunks.
  4. Sprinkle with chives.
  5. Drizzle with GOAT Cobb Dressing right before serving.
  6. Crack black pepper over the top.

GOAT Finish

  • Extra blue cheese crumbles
  • A squeeze of fresh lemon
  • A few dashes of hot sauce

Serve ice cold. Eat like a boss.
