Yield: About 2 1/2 cups
Prep Time: 20 minutes
Cook Time: 35 to 45 minutes
Ingredients
- 3 red bell peppers, finely diced
- 2 orange bell peppers, finely diced
- 2 fresh jalapeños, finely minced
- 1 large sweet onion, finely diced
- 6 fresh garlic cloves, finely minced
- 2 tablespoons olive oil
- 1/2 cup honey
- 1/4 cup apple cider vinegar
- Juice of 1 orange
- Zest of 1 orange
- 2 tablespoons fresh lemon juice
- 1 teaspoon Diamond Crystal Kosher Salt
- 1/2 teaspoon fresh cracked black pepper
Equipment
- Large heavy-bottomed saucepan or Dutch oven
- Wooden spoon or heatproof spatula
- Sharp chef’s knife
- Cutting board
- Microplane or citrus zester
- Citrus juicer
- Clean glass jars or airtight containers
Instructions
- Heat the olive oil in a large, heavy-bottomed saucepan over medium heat.
- Add the diced sweet onion and cook for about 5 minutes, stirring occasionally, until soft and translucent.
- Add the red bell peppers, orange bell peppers, and jalapeños.
- Cook for 10 to 12 minutes, stirring often, until the peppers are softened and beginning to release their juices.
- Add the fresh garlic and cook for 1 minute, stirring constantly. Do not allow the garlic to brown.
- Stir in the honey, apple cider vinegar, orange juice, orange zest, lemon juice, Diamond Crystal Kosher Salt, and fresh cracked black pepper.
- Bring the mixture to a gentle simmer.
- Reduce the heat to medium-low and cook for 20 to 30 minutes, stirring occasionally, until the mixture is thick, glossy, and jam-like.
- Remove the saucepan from the heat and allow the jam to cool completely. It will continue to thicken as it cools.
- Transfer the finished jam to clean glass jars or airtight containers and refrigerate.
Chef Tips
- Use ripe, firm peppers for the brightest color and cleanest flavor.
- Dice the peppers uniformly so the jam cooks evenly and retains a premium texture.
- Adjust the jalapeño quantity to control the heat.
- Do not rush the reduction. The finished jam should be thick and glossy, not watery.
- The flavor improves significantly after resting overnight.
- If the jam becomes too thick, loosen it with 1 tablespoon of water.
- Serve chilled, at room temperature, or gently warmed depending on the application.
