Creamy, herb-packed, and perfectly balanced, this is not ordinary ranch dressing. GOAT Ranch is made with real buttermilk, Duke’s mayonnaise, sour cream, fresh herbs, garlic, Dijon mustard, and zero shortcuts.

Use it as a salad dressing, vegetable dip, wing sauce, sandwich spread, drizzle, or marinade. It is bold, creamy, fresh, and built for repeated use.

Ingredients

  • 1 cup buttermilk
  • ½ cup Duke’s mayonnaise
  • ½ cup sour cream
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon white wine vinegar
  • 1 fresh garlic clove, finely minced
  • 1 tablespoon fresh chives, finely minced
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon fresh flat-leaf parsley, finely chopped
  • 1 teaspoon fresh onion, finely grated or minced
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Diamond Crystal kosher salt, plus more to taste
  • ½ teaspoon freshly cracked black pepper, plus more to taste
  • Pinch of smoked finishing salt, optional

Instructions

  1. Add the buttermilk, Duke’s mayonnaise, and sour cream to a large mixing bowl. Whisk until completely smooth.
  2. Add the fresh lemon juice, white wine vinegar, and Dijon mustard. Whisk until evenly incorporated.
  3. Stir in the fresh garlic, chives, dill, parsley, and grated onion.
  4. Season with Diamond Crystal kosher salt, freshly cracked black pepper, and the optional smoked finishing salt.
  5. Whisk thoroughly until the herbs and aromatics are evenly distributed.
  6. Taste and adjust the lemon juice, vinegar, salt, or black pepper as needed.
  7. Cover and refrigerate for at least 30 minutes to allow the flavors to meld and the dressing to thicken.
  8. Whisk again immediately before serving. For a thinner dressing, whisk in additional buttermilk 1 tablespoon at a time.

Chef Tips

  • Fresh herbs are non-negotiable. Dried herbs cannot produce the clean flavor, color, or aroma required for GOAT Ranch.
  • Use quality buttermilk. The buttermilk controls the dressing’s acidity, tang, and final texture.
  • Grate the onion finely. This distributes fresh onion flavor throughout the dressing without leaving harsh pieces.
  • Allow time for chilling. The dressing thickens and becomes more cohesive as it rests.
  • Control the consistency. Keep it thick for dipping or add more buttermilk for salads and drizzling.
  • Taste it cold. Final seasoning should be adjusted after chilling because cold temperatures soften salt and acidity.

Make-Ahead & Storage

Prepare GOAT Ranch at least 30 minutes before serving. For better flavor, make it several hours in advance.

Store it in a clean, airtight container in the refrigerator for up to 5 days. Whisk thoroughly before each use. Do not leave the dressing at room temperature for more than 2 hours.
