The GOAT Blue Cheese Dressing Recipe

Bold, creamy, tangy and perfectly balanced. This is not just any blue cheese dressing — it is The Greatest Of All Time. Built with high-quality blue cheese, fresh goat cheese, lemon juice, Worcestershire, garlic and honey, this dressing is the perfect partner for the GOAT Wedge Salad.

Ingredients

  • 1 cup mayonnaise
  • ½ cup sour cream
  • ¼ cup buttermilk
  • 6 oz high-quality blue cheese, Danish Blue or Gorgonzola Dolce
  • 2 oz fresh goat cheese
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1 small garlic clove, microplaned
  • 1 teaspoon honey
  • ½ teaspoon Diamond Crystal kosher salt
  • ½ teaspoon freshly cracked black pepper

Method

  • In a bowl, mash half of the blue cheese and all of the goat cheese into a smooth paste.
  • Whisk in mayonnaise, sour cream, buttermilk, lemon juice, Worcestershire sauce, garlic, honey, salt and pepper until smooth.
  • Gently fold in the remaining blue cheese crumbles.
  • Cover and refrigerate for at least 4 hours. Overnight is even better. Stir before serving.

  • Use high-quality blue cheese. It makes all the difference.
  • The goat cheese adds creamy tang and the honey balances the sharpness.
  • This dressing gets better with time. Make it ahead and let the flavors marry in the fridge.
