GOAT Onion & Pepper Sofrito
The soul of the sandwich.
Sweet, smoky, spicy, garlicky, and cooked low and slow, this sofrito is the foundation of flavor behind the GOAT Cheese Steak Sandwich.
Red onion, red bell pepper, jalapeño, and plenty of fresh garlic are slowly cooked in olive oil until soft, sweet, lightly caramelized, and packed with flavor.
Use it on cheesesteaks, burgers, tacos, grilled sausages, sandwiches, eggs, rice bowls, roasted vegetables, and anything else that needs a serious flavor upgrade.
Yield: About 1 1/2 cups

Ingredients
- 1/2 red onion, cut into small dice, about 1 cup
- 1 red bell pepper, cut into small dice, about 1 cup
- 1 fresh jalapeño, cut into small dice, seeds removed for mild or retained for more heat
- 6 fresh garlic cloves, finely minced
- 2 tablespoons olive oil, plus more as needed
- 1/2 teaspoon Diamond Crystal Kosher Salt, plus more to taste
- 1/2 teaspoon fresh cracked black pepper, plus more to taste
Equipment
- Cast-iron skillet or griddle
- Sharp chef’s knife
- Cutting board
- Wooden spoon or heatproof spatula
- Measuring spoons

Instructions
- Heat the olive oil in a cast-iron skillet or griddle over medium heat.
- Add the diced red onion, red bell pepper, and jalapeño.
- Season with Diamond Crystal Kosher Salt and fresh cracked black pepper.
- Cook for 3 to 4 minutes, stirring frequently, until the vegetables begin to soften.
- Add the fresh garlic and stir until completely distributed.
- Reduce the heat to medium-low and cook for 10 to 15 minutes, stirring frequently.
- Add a small amount of additional olive oil if the pan becomes dry.
- Continue cooking until the vegetables are soft, sweet, glossy, and lightly caramelized.
- Taste and adjust the salt and black pepper as needed.
- Remove from the heat and use immediately, or allow to cool before refrigerating.
Chef Tips
- Low and slow is the key. High heat will brown the vegetables before they become properly soft and sweet.
- Add the garlic after the vegetables begin to soften so it does not burn.
- Cut every vegetable into a consistent small dice for even cooking and a clean sandwich texture.
- Keep enough olive oil in the pan to coat the vegetables without making the sofrito greasy.

Make-Ahead and Storage
GOAT Onion & Pepper Sofrito may be prepared ahead and refrigerated in a clean, airtight container for up to five days.

Add a small drizzle of olive oil during reheating if the sofrito appears dry.
Freezing is possible for up to two months, although the vegetables will have a slightly softer texture after thawing.
