GOAT Florida Lobster Roll

More Lobster Than Bread. Always.

 

This is not a Maine lobster roll. This is Florida. Sweet Florida spiny lobster cooked sous vide, lightly torched, tossed in warm clarified butter, fresh key lime juice, chives and Maldon finishing salt. No mayo. No fillers. Just lobster.

Lobster Prep

  • 1 lb fresh Florida spiny lobster tails (2–3 tails)
  • 2 tbsp clarified butter
  • Diamond Crystal kosher salt
  • Fresh cracked black pepper

Lobster Toss

  • 2 tbsp clarified butter, melted
  • 1 tbsp fresh key lime juice
  • 2 tbsp fresh chives, finely sliced
  • Diamond Crystal kosher salt to taste
  • Fresh cracked black pepper
  • Maldon finishing salt

The Roll

  • 4 brioche hot dog buns
  • 2 tbsp softened butter

Method

  1. Set sous vide bath to 130°F.
  2. Vacuum seal lobster with clarified butter and salt.
  3. Cook for 40 minutes.
  4. Remove and pat completely dry.
  5. Lightly torch for aroma and color.
  6. Cut lobster into large luxurious chunks.
  7. Toss gently with warm clarified butter, key lime juice, chives, salt and pepper.
  8. Butter inside of brioche buns.
  9. Toast until golden brown.
  10. Pile lobster high.
  11. Finish with fresh chives and Maldon salt.
  12. Serve immediately.

Chef Notes

  • Warm butter lets the lobster shine.
  • No mayo. No fillers. No shortcuts.
  • Florida spiny lobster has a cleaner, sweeter flavor profile.
  • The lobster should always dominate the roll.
