GOAT Caesar Dressing

A great Caesar dressing should be rich, creamy and unapologetically bold. Fresh garlic, real anchovies, Parmesan cheese and fresh lemon create a dressing that clings beautifully to crisp romaine without overpowering it. This is the Caesar you'll make again and again.

Approximately 1⅓ cups (8 servings)
Ingredients
- 2 large egg yolks
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 2 teaspoons Worcestershire sauce
- 2 anchovy fillets, finely chopped
- 2 garlic cloves, finely minced
- ½ cup mayonnaise
- ½ cup sour cream
- ¼ cup freshly grated Parmesan cheese
- ¼ cup extra virgin olive oil
- Diamond Crystal Kosher Salt
- Fresh cracked black pepper
Equipment
- Mixing bowl
- Whisk

Instructions
- Whisk together the egg yolks, lemon juice and Dijon mustard until smooth.
- Add Worcestershire sauce, anchovies and garlic. Whisk well.
- Whisk in the mayonnaise and sour cream until fully incorporated.
- Fold in the freshly grated Parmesan.
- Slowly drizzle in the olive oil while whisking until smooth and creamy.
- Season with Diamond Crystal Kosher Salt and fresh cracked black pepper.
- Refrigerate for at least 30 minutes before serving.
- Whisk again before using.
