GOAT Caribbean Cracked Conch

This is the official GOAT method for cracked conch—tender inside, shatteringly crisp outside, and seasoned like the islands.
Fresh conch is carefully tenderized, marinated in seasoned buttermilk, coated in a light mixture of all-purpose flour and potato starch, then fried hot and fast until golden brown.
Serve it immediately with lime wedges and GOAT Wicked Tartar Sauce. This is how you make conch worth talking about.

Ingredients
Conch
- 2 pounds fresh conch, thoroughly tenderized
- 1 cup buttermilk
- 1 tablespoon Crystal Hot Sauce
- 1 teaspoon Worcestershire sauce
- Diamond Crystal Kosher Salt, to taste
- Fresh cracked black pepper, to taste
Breading
- 1 1/2 cups all-purpose flour
- 1/2 cup potato starch
- Diamond Crystal Kosher Salt, to taste
- Fresh cracked black pepper, to taste
For Frying and Serving
- Neutral frying oil
- Fresh lime wedges
- GOAT Wicked Tartar Sauce
Equipment

- Sharp chef’s knife
- Cutting board
- Large mixing bowl
- Separate bowl for breading
- Wire rack and sheet pan
- Deep fryer or heavy-bottomed pot

Instructions
- Place the fresh conch on a sturdy cutting board.
- Tenderize the conch thoroughly with a meat mallet, or lightly score it in a crosshatch pattern. This step is essential; fresh conch is naturally tough.
- Cut the tenderized conch into pieces approximately 1/2 to 1 inch in size.
- In a large bowl, whisk together the buttermilk, Crystal Hot Sauce, Worcestershire sauce, Diamond Crystal Kosher Salt, and fresh cracked black pepper.
- Add the conch to the buttermilk mixture and toss until completely coated.
- Cover and refrigerate for at least 2 hours, preferably overnight.
- In a separate bowl, combine the all-purpose flour, potato starch, Diamond Crystal Kosher Salt, and fresh cracked black pepper.
- Remove the conch from the marinade and allow the excess buttermilk to drip off.
- Dredge the conch in the flour mixture, pressing gently so the breading adheres.
- Transfer the breaded conch to a wire rack and refrigerate for 15 minutes. This helps the coating adhere and produces a crisper crust.
- Heat the frying oil to 350°F.
- Fry the conch in small batches for approximately 2 to 3 minutes, or until deeply golden brown and crisp.
- Remove the conch from the oil and drain it on a wire rack. Do not drain it on paper towels, which can soften the crust.
- Season immediately with Diamond Crystal Kosher Salt and fresh cracked black pepper.
- Serve hot with lime wedges and GOAT Wicked Tartar Sauce.
Chef Tips
- Always use fresh conch. Frozen conch will not produce the same texture or flavor.
- Tenderizing is non-negotiable. Use a meat mallet or a shallow crosshatch scoring pattern.
- The 75% flour and 25% potato starch blend creates a light, shatteringly crisp crust.
- Chill the breaded conch before frying so the coating stays attached.
- Maintain the oil at 350°F. Cooler oil produces greasy conch; hotter oil browns the coating before the conch is properly heated.
- Do not overcrowd the fryer. Fry in small batches.
- Drain on a wire rack to preserve maximum crispness.
- The conch continues cooking briefly after it leaves the fryer. Perfect doneness is deep golden brown.
Make-Ahead and Storage
The conch may be tenderized and marinated up to 24 hours ahead.
The flour and potato starch breading mixture may be combined several days ahead and stored in an airtight container.
For the best texture, bread and fry the conch immediately before serving. Fried conch does not hold well and should not be refrigerated after cooking unless necessary.
To reheat leftovers, place them on a wire rack over a sheet pan and heat in a 400°F oven until hot and crisp. Do not microwave.
