How to Cook a Perfect Burger: 10 Rules From a Professional Chef

How to cook a perfect burger — 10 rules from a professional chef

A great burger isn't complicated. But there is a world of difference between a decent backyard burger and one that tastes like it came out of a serious restaurant kitchen. Here are my ten rules for getting it right at home.

1. Start With 80/20 Ground Chuck

Fat is flavor. Use fresh ground chuck with roughly 80 percent lean beef and 20 percent fat. Extra-lean beef makes a dry burger, and no amount of sauce will rescue it.

2. Stop Working the Meat

Handle your ground beef as little as possible. Form it gently into patties. Overmixing and squeezing makes a burger dense and tough.

3. Make a Real Burger

For a classic thick burger, portion about 6 to 8 ounces per patty. Keep the thickness even so it cooks consistently.

4. Season the Outside

Diamond Crystal kosher salt and freshly cracked black pepper. That's all good beef needs. Season just before the patty hits the heat.

5. Get the Pan Screaming Hot

A heavy cast-iron skillet or a properly preheated grill gives you the deep brown crust that makes a burger taste like a burger. Don't crowd the cooking surface.

6. Don't Smash the Juices Out

Once the patty is cooking, leave it alone. Pressing down on a thick burger pushes flavorful juices into the pan or fire instead of keeping them in the meat.

7. Cook It Safely

Use an instant-read thermometer. Ground beef should reach 160°F in the center. Don't guess by color or cooking time.

8. American Cheese Wins

Want that classic cheeseburger melt? Use American cheese. It melts evenly, hugs the patty, and delivers the flavor and texture people actually want.

9. Toast the Brioche Bun

A soft brioche bun is my choice, but it has to be toasted. A little color on the cut sides adds flavor and helps keep the bread from turning soggy.

10. Build It With Purpose

Mayonnaise, finely diced onion, crisp dill pickles, shredded iceberg lettuce, and a little ketchup. Balance matters. Every ingredient should make the burger better, not bury the beef.

THE GOAT CHEF™ VERDICT

Great beef. Proper seasoning. Serious heat. A beautiful crust. Melted American cheese. A toasted brioche bun. That's the formula. Keep it simple and execute it like a chef.

Restaurant Quality. Home Kitchen.
