The Greatest Homemade Steak Sauce Recipe
This is not ketchup, and it is not bottled steak sauce. GOAT Steak Sauce is bold, tangy, slightly sweet, and built to enhance great beef—not cover it.
Worcestershire, balsamic vinegar, Dijon mustard, soy sauce, fresh garlic, shallot, honey, and Crystal Hot Sauce create a deeply savory finishing sauce for grilled, pan-seared, reverse-seared, and sous vide steaks.

Ingredients
- ½ cup Heinz ketchup
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 tablespoon balsamic vinegar
- 1 tablespoon light brown sugar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- 1 fresh garlic clove, finely minced
- 1 tablespoon fresh shallot, finely minced
- 1 teaspoon fresh red chile, finely minced (optional)
- ¼ teaspoon freshly cracked black pepper
- Crystal Hot Sauce, to taste
- ½ teaspoon Diamond Crystal kosher salt, plus more to taste
- ¼ cup water

Instructions
- Add the ketchup, Worcestershire sauce, soy sauce, balsamic vinegar, brown sugar, Dijon mustard, honey, garlic, shallot, optional chile, black pepper, Crystal Hot Sauce, Diamond Crystal kosher salt, and water to a medium saucepan.
- Whisk thoroughly until all ingredients are evenly combined.
- Place the saucepan over medium-low heat and bring the mixture to a gentle simmer. Do not allow it to boil aggressively.
- Simmer for 15–20 minutes, stirring occasionally, until the sauce is slightly reduced, glossy, and thick enough to coat the back of a spoon.
- Taste and adjust the seasoning. Add Worcestershire for more savory depth, brown sugar or honey for sweetness, balsamic vinegar for acidity, or Crystal Hot Sauce for additional heat.
- Remove the sauce from the heat and allow it to cool completely.
- Transfer to a clean glass jar and refrigerate. For the best flavor, allow the sauce to rest overnight before serving.

- Do not overpower the beef. Steak sauce should complement perfectly cooked beef—not hide it.
- Keep the simmer gentle. Excessive heat can scorch the sugars and make the sauce bitter.
- Use fresh aromatics. Fresh garlic and shallot provide cleaner flavor than powdered substitutes.
- Watch the consistency. The sauce will continue to thicken as it cools.
- Rest overnight. Time allows the sweet, savory, acidic, and aromatic flavors to fully develop.
