The GOAT Balsamic Vinaigrette

The GOAT Balsamic Vinaigrette is rich, glossy and perfectly balanced with aged balsamic vinegar, Dijon mustard, fresh shallots and honey. Built for steakhouse salads, grilled vegetables, tomatoes, sandwiches and perfectly grilled meats.

Ingredients

  • ½ cup aged balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 small shallot, finely minced
  • 1 tablespoon honey
  • 1 cup extra virgin olive oil
  • 1 teaspoon Diamond Crystal kosher salt
  • ½ teaspoon freshly cracked black pepper

Instructions

  1. Whisk together the balsamic vinegar, Dijon mustard, shallot and honey until fully combined.
  2. Slowly drizzle in the olive oil while whisking continuously to emulsify.
  3. Season with kosher salt and black pepper.
  4. Allow the vinaigrette to rest for 15 minutes before serving.
  5. Shake or whisk again before using.

  • Use a quality aged balsamic for maximum sweetness and depth.
  • Fresh shallot provides balance without overpowering the dressing.
  • Add fresh basil or rosemary for additional complexity.
